Mango walnut energy bites by Harriet Emily

I met Harriet in 2016, we were both working at Farmacy and even though we didn’t had chance to share a lot of time then our friendship has grown with time and I am grateful for her in my life. She is an amazing sound healer and better person.

Here I am sharing one of her delicious recipes, perfect for a pre workout snack 😉 I had the pleasure to try them and can say that they are ABSOLUTELY DELICIOUS!

What I love the most about walnuts, asides from their delicious taste, are their healthy properties. They are a natural source of many of our bodies needs, containing per ounce; 4.32g protein, 48% of our manganese, 22% of our copper, 11% of our magnesium, 10% of our phosphorus, 8% of our vitamin B6 and 5% of our iron daily intakes (source here)!

They really are wonderful, and I decided to celebrate them by using them to make a new energy bite recipe! I love making energy bites, and am always making them for friends wherever I go – so I definitely felt it was time to share a new special recipe for them!

These ones contain dried mango, dried apricot and orange zest, for a vibrant and fruity flavour – combined with the creaminess of walnuts and added protein boost from some hemp protein powder. I hope you enjoy the recipe!

mango and walnut energy bites

makes about 18 small bites

ingredients

150g dried mango

100g dried unsulphured apricots
150g walnuts
2 tsp hemp protein powder
1/2  tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp orange zest
pinch salt

method

  1. Add the mango, apricots, walnuts, protein powder, vanilla, cinnamon, orange zest and salt into a high powered food processor. Blend all of the ingredients together for a few minutes, until they have broken down and formed a sticky crumb.
  2. When this is done, take a scoop of the mixture and press it into a ball shape, then sit it aside onto a plate. Repeat this process until all of the mixture has been used up.
  3. Then, serve or store in the fridge or airtight container.
